Recently I have gotten into watching the new series on TLC, BBQ Pitmasters. The series is interesting and it brings to light a world I never really knew existed, the world of the competitive griller. Now I always knew that there were grilling and barbecue competitions, but I never knew there were this many, that the prizes were so valuable, and that some people were so cocky about their grilling.
The show is educational and entertaining if you like watching shows about grilling (which I do). One of the things that I discovered while watching this show was that there are basically two types of grilling/grillers. There those that are referred to as low and slow, and then there are those that are called high and fast. The two types distinguish the heat at which one grills and the time that it takes to finish whatever one is grilling. Somebody who grills low and slow does their grilling at a lower heat that takes longer. Low and slow is the type of grilling that is most often used for a brisket, a whole pig, or ribs. High and fast can be used for smaller cuts of meat, like a chicken breast, a pork chop, or even a steak. Personally I prefer high and fast for a couple of reasons. First, I typically grill smaller cuts of meat mainly for my wife and I, as opposed to cooking a whole pig. Second, and the most important one, I am incredibly impatient.
You can get away with high and fast when you are grilling a chicken breast or a steak, but we can get into real trouble trying to live the rest of our lives in the same way. Your bank account for example is best dealt with low and slow according to the writer of Proverbs. Everyone wants to become wealthy overnight, but the simple truth of the matter is that wise financial decisions mean doing the right thing a little at a time for a long time.
